Soft, washed rind cow's milk cheese. Custardy and fudgy texture. Hints of clotted cream, sweet corn, guava, vanilla, straw, and bacon. Slightly funky, yeasty ham aromatics, too! Made with organic Ayrshire cow’s milk. Gets softer and more luscious with age. Pasteurized. Aged two - eight weeks. Approx. 1 pound wheels.
Maia is a Greek/Italian earth goddess of Spring, warmth, Spring growth, and nurturing. The month of May is attributed to her. In Greek and Latin Maia means “nursing mother.” The name has ancient origins. Variations of “Maia/Maya” occur around the world in such places as Nepal, Japan, Israel, India, New Zealand, the Basque region, and Brazil. Depending on where she’s found, Maia can mean bravery, courage, generosity, love, or a brook. My Maia is mostly Greek. She is the eldest of the Pleiades – the seven sisters who are mountain nymphs turned into the stars that form the constellation of the Pleiades. Maia lived in a cave and raised the son of Callisto after Callisto was turned into a bear. The bear later became the constellation of Ursa Major – The Great Bear.
